I have absolutely no idea how people bake mince pies that are so light they almost lift off the plate.  Mine always turn out to be pale and rather uninteresting and never, ever melt in the mouth. But here they are in all their glory and there are never any left over by New Year so can't be that bad!  Anyway, that's that job done!
